If you want a spine to strtch and snap, use paper amche pre mix pulp and let it dry out for a day or 2, when you mix it, add som ehair to the mix, then when it is pulled apart (weaken the spot you want it to break with small incisions) the hair will hold it slightly and look even more disturbing when covered with blood and some mayo. This works well if you paint and wig a foam head that has been hacked up on the bottom and place it inside a shirt collar, latex the chopped up bottom and dig a small hole in the bottom, connecting the 2 halves of the spine (one in head one in latexed and bloodied neck). Shoot, cut and pull, very nasty effect. I have used it twice and it always looks good.

for pus, I would rather use custard instead of mayo. both the color and texture are more realistic.

also, for that ripping effect, use savini's famous "chunks-o-flesh".
spread a thin coat of red colored liquid latex on a smooth surface(plate glass makes the best results) and when its dry, rub it to make holes in the latex. now pull it off, and you have a sheet of sticky, gruesome, rubbery, elastic chunks-o-flesh! just put it besides the spine to act as sinews and meat.
