Pointer 1: Don't get stabbed
Pointer 2: Have a camera nearby in case you do get stabbed
Pointer 3: Make sure the guy you're fighting couldn't stab you if his life depended on it

practise first using marker pens( red is good )once you can do the scene without getting pen on each other then use the real knives or use martail arts practise rubber knives for all shots except close ups you save on alot of scars this way.
ashes to ashes dust to dust if you dont get it out and use it its going to rust !

make sure you have the whole fight choreographed so you two each know where the other is going to go before he does it.

rehearse, rehearse, rehearse!

rehearse until you hate the scene and get bored of it and want to just leave it out.

that is the key.

Considerations:

1.Blunten the knives

2. Consider the aims of the fight. Is it to be realistic or extended Hollywood style. Remember in a real knife fight the aim is one cut to finish the fight.

3. Rehearse and get it fast and flowing. No pauses, stumbles or gaps.

4. Keep all the actions nice and tight

One good tip is if you want to use real daggers (meaning you have nothing else, or someone is insisting the plastic ones look to cheap) then go in slow-mo and speed the tape up later when editing.

Famous, you have an act for bringing up old threads, don't you? :P

For West Side Story, we had a box of look-alike spring combs that we used as the switch blades. As far as we could tell in the pit, they looked 100% real. You can buy them very very cheap in a party/toy store.

hell for stage work, as Epsilon has said, it is even easier to mock up weaponry due to the audience not being able to get up close and personal with the whole scene

I got some chrome spray paint, I'm very disappointed, it came out more pewter looking than chrome. Be warned if you're spraying plastic knives to make them look real, the results may not be what you're after. Did a great job of transforming a cheap plastic watering can I must admit.

I like what fat pony said up above and choreograph the whole fight with markers then do the real thing

yeah or you can always choreograph it and angle the shots to appear as if you are knife fighting and have someother utencil in use. Camera is always your best effect remember that.
