Nice work Particle Illusion in the second one? I'd be tempted to add a little bit of a flash and some illumination as it hits its target.

I think even large budget movies do it frame by frame (export to Photoshop filmstrip, go from there). Then you need to research a little better. Certainly not done with a Photoshop film strip. Maya is supposed to be simpler to learn and use. Maya is definitely preferred by companies like Pixar -- for cartoons/animations. The most photorealistic outcomes seem to come from Max though. Tough one. Try stabilising the footage in AE, maybe apply a median filter to iron out noise.
